#41. 서울우유 홍보대사 엄나윤님의 “핑크 리조또 레시피”
홍국균인 붉은 누룩곰팡이를 멥쌀 밥알 표면에 배양해 만들어진 홍국쌀, 빨간색이 특징인 요 홍국쌀은 피를 잘 돌게 하고 콜레스테롤 저하와 혈압 및 혈당강화작용이 있는 것으로 알려져 있어요~ 빨간색이 매력적인 홍국쌀로 핑크리조또를 만들어 봅니다^^
홍국쌀은 물에 살짝 불려 주세요~ 그리고 생크림 대신 서울우유에서 나온 ‘목장의 신선함이 살아있는 우유’를 사용합니다. 우유로만 만드는 리조또도 꽤 괜찮아요~ 느끼함도 덜하구요.
불린 쌀은 살짝 볶아주고, 쌀알이 팽창되었다 싶을 때 우유를 넣고 바글바글 끓여줘요~ 볶은 표고버섯도 조금 넣어줬어요. 마지막에는 소금간 살짝 해주세요~
앙증맞은 포트 안에서 핑크핑크한 리조또가 기다리고 있습니다~
홍국쌀에서 붉은 색소가 나오기 때문에 우유도 핑크로 금새 변해버려요. 나는 우유만으로는 크리미함을 느낄 수 없다~ 하시면 치즈를 조금 넣어줘도 좋답니다 ㅎㅎ 치즈는 모짜렐라도 좋고, 슬라이스치즈도 좋고, 원하시는 걸로~
몸에 좋은 홍국쌀에 표고버섯이 듬뿍 들어간 핑크리조또, 생크림이 아닌 우유로 만들어 담백하게 즐길 수 있답니다~
서울우유와 홍국쌀이 만나 색다른 리조또가 되었어요^^
