#33. 서울우유 홍보대사 장인자님의 “아몬드 피넛 버터쿠키 레시피”
어제는 비도 부슬부슬 오고 아이들 집에 오면 함께 먹으려고 쿠키를 구웠어요!
집에 있는 견과류를 싹 모아도 아몬드 땅콩, 캐슈넛이 얼마 안 되네요 ^^;
그래서 있는 재료들을 칼로 마구마구 다져서 넣어주었답니다!
아몬드 피넛버터쿠키 재료
박력분 100g, 달걀 1개, 땅콩버터 80g, 무가염버터 70g, 설탕 45g, 베이킹파우더 2g,
다진 견과류(아몬드, 땅콩, 캐슈넛) 80g
제가 쿠키 구울 때 가장 많이 사용하는 서울우유 무가염버터에요 ^^
땅콩버터 80g, 무가염버터 70g을 섞어줍니다.
설탕 45g을 넣어 섞어준 뒤, 달걀 한 개를 두 번 나눠 넣어줍니다.
박력분과 베이킹파우더를 넣은 뒤 날가루가 보이지 않을 정도로만 섞어주고,
아몬드, 캐슈넛, 땅콩은 적당히 칼로 다져 넣어요~
굵직하게 다져야 씹는 식감이 좋더라고요 ^^
그리고, 오븐 팬에 한 수저씩 떠서 올린 뒤 180도 예열된 오븐에서 15~20분 구워줍니다!
(오븐마다 사양이 다르고, 전 17분 구웠답니다.)
긴 기다림 끝, 식힘망에 올려 완전히 식혀주면 시판 과자와는 비교불가! 제가 먹어봐도 너무너무 고소하고 맛있는 피넛버터쿠키가 탄생했어요~~!! 아몬드와 캐슈넛이 듬뿍 들어있어 식감도 너무 좋구요~
커피와 함께 먹으니 고소하고 달콤함이 두배! ^^
두 판을 구워 약 22개 정도 나왔는데 아이들이 맛있다며 너무너무 잘 먹더라고요 ^^
다음에는 파운드케이크와 초코칩쿠키를 구워 볼까하는데요~ 많이 기대해주세요 ^^
